THE WOODLANDS, TX – (October 30, 2008) – Grimaldi’s Coal Brick-Oven Pizzeria, dubbed “the pizza that made the Brooklyn Bridge famous”, has announced plans to open a new restaurant at 20 Waterway Avenue overlooking the Fountains at Waterway Square, according to Greg Jordan, director of commercial sales for The Woodlands Development Company (TWDC).
Grimaldi’s traces its heritage back to the first pizzeria in America which was established back in 1905. The smoky taste of coal-fired brick oven pizza became a “must have” for pizza lovers and celebrities alike including Frank Sinatra and former New York City Mayor Rudy Giuliani. Baking in a coal-fired brick oven dates back 75 years, when all pizzerias and bakeries cooked with coal because it gave the pizza a unique flavor and crisp crust that is not possible from gas, convection or wood ovens.
In the world of pizza, Grimaldi’s is an institution. It has garnered more awards than any other pizzeria in the country with more celebrity sightings than most 5-star restaurants. Using only the freshest ingredients, “secret recipe” pizza sauce, homemade mozzarella cheese and dough, Grimaldi’s serves traditional pizza (as it began in Naples, Italy), handmade calzones, salads, desserts and features an extensive martini list and selection of wines in an upscale yet casual, family oriented pizzeria. The restaurant will include a patio for outdoor dining that features a spectacular view of the Fountains at Waterway Square.
Long-time friends and Grimaldi’s business partners, Joseph Ciolli and Eric Greenwald oversee operations for 10 pizzerias in Nevada, Arizona and Texas and have plans to grow the Grimaldi’s brand further.
